Calzone








The dough we made for the calzones was terrific, turned out soft and fluffy, I probably would not use the vegan cheese again, but I would however add pineapple, and maybe some veggie bacon!
So I am going to post the dough recipe, which I found in the Martha Stewart living cookbook.

  • 1 cup warm water
  • 1/4 tsp sugar ( I used maple syrup)
  • 2 tsp active dry yeast
  • 2 3/4 - 3 1/4 cups flour
  • 1 tsp salt
  • 1 1/2 tbsp olive oil, plus more for the bowl

Pour the warm water into a small bowl. Add sugar and sprinkle in the yeast.
Using a fork, stir the mixture until the yeast is dissolved and water has turned tan.
Let the yeast stand until foamy, about 10 minutes.
In a mixer with dough attachment, combine flour and salt. Add the yeast mixture and oil.
Mix until dough comes together, adding more flour as needed until dough is smooth,
Transfer to a clean surface, knead four or five times, make into a ball.
Place the dough in a lightly oiled bowl, smooth side up.
Cover tightly with plastic wrap. Let the dough rise in a warm place until double in size.
About 40 minutes.
Remove plastic wrap and place your fist in the center of the dough to punch it down.
Fold dough back onto itself four of five times.
Cover with plastic wrap, and let rise again in a warm place until the dough has doubled in size,
about 30 minutes.
Cut into quarters, roll out on floured surface, into a circular shape.
add your toppings to one half of the dough, bring the other half over top and twist the edges together, bake in a 450 oven for 20-25 minutes
